Casa Del Caciocavallo was founded by Freddy and Christina Destefano, and officially opened their doors in 2003. The idea for the company came from Maria Destefano (Freddy’s mother) due to the fact that she had been making this particular cheese for over 34 years by hand, using the same recipe. Eventually they wanted to make the cheeses available to every body and opened the company to make this happen.

Caciocavallo is a semi-hard, stretched-curd cheese.  It is made from either sheep’s or cow’s milk.  It has a milky texture and a flavor like that of mozzarella, but it has a sharpness that is a little stronger than provolone. The curd is melted and pressed into a single mass and is stretched to achieve proper texture, elasticity, and appearance. Once it is pulled it is rolled around the cheese maker’s hand to develop peel-able layers within the ball. The ball is formed into a gourd shape and is cooled. It then rests in a brine and subsequently will be dried, then aged for several months.

Locally raised duck eggs from Daring Drake Farm

Daring Drake Farm is a family owned orchard with a flock of free range ducks for egg production. They are lucky to be located in the Finger Lakes region of New York State, and right down the road from Regional Access!  The orchard is a diverse mix of fruits including apples, pears, quince, plums, cherries, grapes, raspberries, currants and gooseberries. They sell all natural free range duck eggs with no antibiotics by the 1/2 dozen carton. Daring Drake provides crushed oyster shells and a certified organic feed mix from locally grown grains to supplement the ducks foraging for optimum health.

The return of seasonally available pastured local lamb

Its back! Hallelujah and just in time for the holidays. Give your sales rep a buzz to see what cuts are available this week, and remember many unique and hard to find cuts can be special ordered and custom cut for you at the next slaughter date.

Nistock Farm lambs are raised on pastures in Bath, NY and minimally supplemented with a grain ration based on corn and oats also grown on the farm. The lambs do receive lambhood vaccinations and deworming agents when needed to protect the health of the flock, but they are not given any growth hormones, or fed antibiotics or unnatural feed additives.

Nistock trailer’s their lambs to the processing facility themselves to ensure the safety and comfort of the animals. They use only Grizzly’s in Hunt, NY to process the lambs. They are a fully USDA inspected facility and do a careful, professional job and are a pleasure to work with. Slaughter is accomplished quickly and humanely.

For all of my fellow beef enthusiasts out there, I am truly excited to introduce you to the Adirondack Grazers Coop…this is small scale, natural beef from an impassioned group of farmers dedicated to providing the highest quality 100% grassfed (and grain-finished, if you prefer) beef—all with absolute transparency. These family packs are part introduction, part enticement—stock your freezer for those cold months around the corner—be impressed by the farm and animal bios included in every box—but most of all revel in the superb flavor. I’m thinking: braised shanks, a hearty red and a warm fire…I can make it through winter.

Fresh, Young Ginger from The Good Life Farm

Good Life ginger is harvested fresh and delivered to Regional Access the same day.  As a tropical plant grown in the much shorter season of the Northeast, it is a perishable product and is different than the cured ginger we generally find in the store.  Young ginger lends a flavor and freshness to dishes that surpasses cured ginger, as well as opening up more opportunities for culinary experimentation.  Consider trying it raw- grated into greens and root salads- cooked into vegetable dishes or in tea, ginger beer, glazes, sauces etc. Deliveries start the week of 10/01/12 so email mark@regionalaccess.netto reserve some today!

August Specials and New Products from Regional Access

What a long, strange summer it’s been.  All we can do is keep on truckin’ you the food we all love while our neighboring farms continue to swelter and hope for rain. On to the food…  new product alert! Check out Tickle Sauce. Our dispatch manager Nick has tested it on everything from Italian takeout to omelettes and declared it, “Better than srichacha!”. High praise indeed. Our Southern Tier neighbors over at Cross Creek Farm have revamped their label, gotten some better looking jars, and even bumped the size from 8oz to 9oz so you get more great tasting food at the same price. The topper? They are on sale for August! $36 a case for a 12ct of both Apple Blueberry Butter, and the original Apple Butter. Both varieties have  UNSWEETENED options available. Cross Creek Farm Fruit Butters are handcrafted in Berkshire, NY using only local fruits. They are all made in small batches to ensure the best quality possible. The original recipe for the apple butter was an old family recipe, and consists of chunks of fruit so you enjoy that nice bite of fruit with your butter.
