Truffle Cheese, Sierra La Solana 2/~6#

Sierra La Solana Truffle Cheese. This is good truffle cheese. Few foods are more famed in the culinary world than truffles and as a result, it gets copied and adulterated in all sorts of ways. Some companies use chemical flavorings or questionable oils to mimic the flavor of truffles and capitalize on their popularity, but they taste terrible. As a result, I—a professional food selector—have become wary of truffle flavored products. So it means something more when I say: this is good truffle cheese.

Maria José in La Mancha, the maker of the Essex St. Cheese Raw Milk Manchego, makes this cheese with raw milk manchega sheep’s milk. The cheese made from this milk is smooth and nutty and sweet, and it gets a deep earthy character with to the addition of real shaved truffles (not oil). Rare, limited, wonderful. Grab some before it’s gone.

“I love sheep’s milk cheese and I love black truffles. The combination is WOW!!”
