About Ithaca Soy
Ithaca Soy has been a staple of the Ithaca community for over 25 years. Founded with a commitment to bring people the freshest handmade, unpasteurized, artisanal, small-batch tofu and Tofu Kan, Ithaca Soy is one of the only handmade tofu producers in New York State.
In July 2015 Adam Potenza became the newest owner of this business. This was truly special for him because Potenza Organic Farms, run by Adam’s father Tony, is the sole supplier of the organic soybeans used to make Ithaca Soy’s products. Tony Potenza was one of the founding members of NOFA-NY and one of the pioneers of the organic agriculture movement both in New York and nationally.
All the soybeans are grown in Tompkins, Seneca, and Schuyler counties, within 20 miles of Ithaca Soy’s production facility, making Ithaca Soy a hyper-local product. Adam has had a hand in growing these beans, as he’s worked on the family farm since he was 10 years old. He says, “It’s amazing to see the whole process from a bean in the ground to the tofu on your plate!”
