Some companies use chemical flavorings or questionable oils to mimic the flavor of truffles and capitalize on their popularity, but they taste terrible. Maria José in La Mancha, the maker of the Essex St. Cheese Raw Milk Manchego, makes this cheese with raw milk manchega sheep’s milk. The cheese made from this milk is smooth and nutty and sweet, and it gets a deep earthy character with to the addition of real shaved truffles (not oil). Rare, limited, wonderful.
